Strawberry-Rhubarb Pie Recipe for Elle
Shopping List
3 eggs (beaten)
1 1/4 cup sugar
1/4 cup flour
1/4 t salt
1 T butter
1/2 t nutmeg
2 1/2 cup 1-inch pink rhubarb
1 1/2 cup strawberries (sliced)
Pastry for 9" lattice-top pie

To do
Combine eggs, sugar, flour, salt and nutmeg; mix well. Combine rhubarb and strawberries. Line 9" pie plate with pastry; fill with fruits. Pour egg mixture over. Dot with butter. Top with lattice crust, crimping edge high. Bake in 400F oven for approx 40 min.

Rhubarb pie, huh? I've actually never had rhubarb pie before. I am not even sure I know what rhubarb looks like. Maybe I'll have to try it sometime.

Can I omit the strawberries? My cousin and I have birthdays 2 days apart. When we were kids my Grandma would make us a special treat to celebrate. Amber would get a cake and I always asked for rhubarb pie. Of course she made straight rhubarb. Talk about turn your face inside out pie! I loved it!!! What the heck am I going to do with all this rhubarb? D doesn't even like rhubarb!

Thanks for the recipe. I might just have to give the strawberries a shot.

My parents grow some rhubarb at their house... I love it. In addition to faboo pies, my mother used to stew rhubard and pour it over ice cream. It's wonderful.
