Indulging On An Adoption Budget

I went to our local grocery store yesterday, not Trader Joes, but something like it called "Henrys". They specialize in fresh, local produce. They also have tons of bulk ingredients, cereals, snacks, and I have found it really fun to shop there. They just opened a new store around the corner from us, so it will probably turn into my weekly shopping trip store.

Anyways, yesterday I was there picking up up dinner and they had strawberries on sale. I think I got 3 or 5 lbs of strawberries for $1.77. What does this mean? Strawberry shortcake and whipped cream for a week! Check out this easy recipe from a Better Homes & Gardens cookbook:

Strawberry Shortcake
2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 cup butter
1 beaten egg
2/3 cup milk
1 cup whipping cream, whipped
6 cups strawberries, sliced

Cut up strawberries and mix with 1/4 cup sugar; set aside. Mix together remaining sugar, flour, and baking powder in a medium bowl. Cut in butter till mixture resembles coarse crumbs. Combine egg and milk; add to dry mixture. Stir just to moisten. Spread batter into a greased 8 x 1.5-inch round baking pan. Bake in 450F oven for 15 to 18 minutes or until a toothpick inserted near the center comes out clean. Cool in pan. Enjoy with your strawberries and whipped cream.

Strawberries for $1.77. I can tell you live in CA! I can't wait until fresh fruit is in season here in the Midwest.

Oh I can't wait for strawberries. For some reason the California ones they ship up her aren't that flavorful. Besides they totally gouge you on price. I grow my own strawberries. I have so many plants that I pick them all summer. Poor D, I would pick them every day and not let him eat any! I was freezing them so I could make jam. We got enough strawberries to make 8 1/2 jars! that 1/2 jar was mine.
To his credit I do let him eat the really big ones though.
The shortcake looks awesome!
