
Here is one of my favorite family recipes (thanks
Margaret). It's great because:
1. You can make it the night before and place in the oven one hour before dinner. Minimal hands on time when cooking means you can spend time with your guests.
2. Makes the house smell like real home cooking.
3. Typical side dishes are easy - rice, fresh green beans, bread, salad.
4. All ingredients are easy to obtain or keep in your fridge.
5. Fool proof, homemade sauce.
6. Great meal if you need to feed 4-6 people.
Swiss Chicken Cutlets5 chicken breasts - pounded, split, skinned to 1/4 inch thick
(plan approx 1/3 lb chicken per person)
2 eggs (beaten)
1 c bread crumbs
1/4 c cooking oil
3 T butter
1 c (4oz) shredded swiss cheese
1/4 c flour
1/2 t salt
1/8 t pepper
2 1/2 c milk
1/2 c dry white wine
avocado and tomato wedges (optional)
Lightly salt chicken breasts, dip in egg and then bread crumbs. Brown chicken 2 min on each side in oil in a large skillet.
In a saucepan, melt butter, blend in flour, salt, pepper. Add milk all at once. Cook and stir until thickened and bubbly. Remove from heat. Stir in wine. Pour ~1/2 of sauce into bottom of 13 x 9 in baking dish. Arrange chicken cutlets atop sauce. Top with remaining sauce. Cover and chill several hours or overnight. Bake covered in foil in 350F oven for 50 min. Sprinkle with cheese. Top with avocado and tomato. Return to oven for 2 min. Serve.
