Schmengali, aka Vegetable Stew

My Russian grandmother had three standard "welcome" dinners when we would visit her in Indiana. Homemade chicken soup, stuffed cabbage or "Schmengali" aka vegetable kielbasa stew. I found a letter that she wrote to me about three years ago with her Schmengali recipe. I made it last Sunday - although it wasn't the same as hers - it still was really nice to enjoy this again.

1 lb (16 oz) kielbasa (lowfat version works good), chopped 1/4 inch thick slices & halved
1 large onion, chopped
1 clove garlic, minced
4 stalks celery, chopped
4 carrots, chopped
1 green pepper, chopped
3 zucchini, chopped
1/3 green cabbage, chopped
1 can green beans
1 can corn
1 large can chopped tomatoes
2 vegetable or beef bouillon cubes

Saute onion, garlic and celery in vegetable oil until soft. Add all other vegetables (chopped dime-sized) and bring to a simmer. Add the kielbasa and bouillon cubes in 2 cups water. Simmer 30 minutes or longer. Serve with rice (or mashed potatoes) and bread/butter.

sorry, the picture actually makes it look kind of gross. this was tuesday night leftovers with mashed potatoes (removed some of the juice). Normally it's more soupy and can be bulked up with rice or barley.

I didn't know your grandmother was Russian. Was that part of what made you look to Russia for adoption?

Thanks for the recipe! We're going to try it this week -Frank loves anything spicy. Kinda cool to add some Russian things to my recipe box.

ps - My Nana always made the best goulash and I have her recipe for it. I can never make it as good as hers either :(

Wow- brings back memories! Tim is salivating! I didn't realize there was actually a recipe for it though...thought it was kinda one of those throw what you got into it. We will have to try it soon! Would love the Chicken Soup Recipe too! We miss Baba alot! So excited to hear things are moving quickly in the adoption process!

We just had it tonight...the 2 little Russians here loved it! Probably brought back memories for our daughter...25 months at adoption...4 y 5m now. :o) Thanks!
